The name comes from Ambur Town, located on the banks of Palar river, in Tamilnadu state of South India, between Chennai and Bangalore. The Ambur Biriyani has a ryal legacy, considered to be the specialty of the Nawabs of Arcot who first introduced this new recipe which is popular throughout south India. Ambur Biriyani stands out from the rest of its contemporaries because of the rice & spices which is used in Ambur Biriyani. The rice unlike Basmati, Seeraga Samba Rice (Jeera Samba rice) is used, and about spices, dry red chili pastes which along with certain other whole spices are used.
